Shrimp Alfredo with Asparagus 

This is a QUICK, delicious and hassle-free meal! 
What you’ll need: 
  • Pasta noodles (angel hair, fettuccine, or noodles of choice) 
  • 1 cup of Heavy whipping cream 
  • 1 1/2 cups of Parmesan Cheese  
  • 1 tablespoon of butter
  • Orgeano, basil, sea salt, pepper for taste 
  • Chopped onions 
  • Asparagus spears 
  • 1 lb. of shrimp or chicken (if desired) 
1) Cook pasta noodles. 
2) Cook desired meat with chopped onions. (Saute in olive oil) 
3) Bring heavy whipping cream and butter to a boil. 
4) Add Parmesan cheese and stir for 1 minute. 
5) Mix noodles and shrimp/chicken with alfredo sauce. Let stand for a few minutes. 
6) Cook asparagus spears
7) Serve and Enjoy! 

Turkey Burger with Sweet & Spicy Sweet Potato Fries 

A twist on a smokehouse BBQ burger! It’s light, healthy and SUPER yummy! 
Here’s what you’ll need: 
  • 1 lb/2 lb of ground turkey
  • Whole wheat hamburger buns
  • Bread Crumbs
  • 1 egg
  • BBQ sauce 
  • Raw Spinach 
  • Onions 
  • Feta Cheese 
  • Sweet Potato Frites (I used Trader Joe’s) 
  • Ground cumin, chili powder, brown sugar, garlic powder 
1) Mix ground turkey, egg yolk, 1 tablespoon of BBQ sauce, chopped onions, 1 tablespoon of bread crumbs, salt & pepper
2) Form patties and grill 
3) Place sweet potato fries on baking sheet and bake for 20 minutes 
4) Pour BBQ sauce on one side of bun, place turkey burger on top then add caramelized onions and feta cheese. Add spinach leaves and top with bun. 
5) Mix together cumin, brown sugar, chili powder and garlic powder together and sprinkle on cooked fries. (1/2 teaspoon of each)
6) Serve and enjoy! 🙂 

Leftover Blues 

I’m not the biggest fan of left overs, but I’ve become a little more creative with my food now! If you’re cooking for one person, you may need to alter some recipes so you don’t have a ton of unwanted leftovers. 
The other night I had chicken for dinner so I took some extra chicken and made chicken salad! It was so good. And because of my previous meals, I used a few left over ingredients too! 
I made a basil Parmesan chicken salad by chopping up some poached/grilled chicken and mixing it with chopped celery, basil, mayo, sour cream and Parmesan cheese. Spread it on some whole wheat bread or whole wheat crackers and you have a quick lunch or snack!
